This sourdough was started on August 24, 2025, during a backcountry hike to the historic fire tower at the top of Ishpatina Ridge. At over 690 metres above sea level, surrounded by boreal forest, granite ridges, and beautiful lakes, this is as wild and rugged as bread gets. Each dehydrated starter contains the strains of wild yeast that were naturally present in the mountain air on top of Ishpatina Ridge the day this sourdough was started. This sourdough was started under native shrubs and trees at the summit and nourished with Ontario-grown flour to create a vibrant sourdough starter that you can bring into your kitchen to share a unique and wild taste of Ontario with your friends and family. This is real backcountry bread, and there's nothing else like it.
